The Mitchen is a new weekly food podcast recorded at The Projects in Sydney. Hosted by food writer/DJ Andrew Levins and chef Mitch Orr (ACME), each week they invite their mates from the food world over to discuss and make jokes about any recent big announcements in food and dining.

The 2016 edition of Gourmet Traveller's Australian Restaurant Guide has just been released, so we sat down with Pat Nourse, Gourmet Traveller's chief restaurant critic and deputy editor, plus two of the people from the restaurant Pat named number one in the country: Momofuku Seiobo's general manager Kylie Javier Ashton and executive chef Paul Carmichael. 

Together we discuss the importance of restaurant reviews and guides (and the difficulties faced by putting one together), the challenges Paul had to overcome when taking over the kitchen at Seiobo and which is the best state for dining in Australia (hint: it's not NT).

Levins and Mitch speak with Adelaide's Duncan Welgemoed, who was previously on the Live From Rootstock episode of The Mitchen, briefly chatting to us as he cooked an entire cow over coals. This time he doesn't roast any livestock BUT he does cook up a few incredible tales, including how he opened his acclaimed restaurant Africola (and why they're making the change from South to North African cuisine) AND some completely insane stories from his life as young South African chef trying to get by in the UK with no money. Great yarns, great dude, great ep.

We’re super excited to announce that Sydney’s Lord Mayor of Wine, Mike Bennie, will be hosting an episode of The Mitchen about wine once a month! We’re even more excited to announce that we FOUND MIKE EGGERT! The two Mikes and Levins gather around Mike Bennie’s business table with every intention of talking about wine but end up talking about beer for 40 minutes before a surprise interruption by Tom Egan of Jed Wines, who’s brought with him a selection of Argentinian wines for us to try. Are we really gonna do this every month? It’s gonna get messy.

The Mitchen is back with new episodes going up every Tuesday! This week Levins and Mitch head to Redfern's Moon Park to speak with two thirds of the owners, chef Ben Sears and sommelier-manager Ned Brooks. One of our favourite restaurants in Sydney, Moon Park's incredible modern Korean food will only be available for another month when they shut their doors in September. We talk with Ben and Ned about how they got started, what Korean food means to them and the ongoing problems that come with running your own restaurant.
