While in Adelaide, Levins had a late night feed at the blazing hot African restaurant Africola and recorded an episode with head chef/owner Duncan Welgemoed and restaurant manager Nikki Friedli, plus good friends Michael Downing (Murdoch Hill Wines) and wine writer Nick Stock.

Learn more about the history of Africola, the merits of Adelaide, why you shouldn't make beer using your beard and why it's important to make sure you actually know the song you're trying to sing before you promise an entire podcast that you're going to sing it.

Levins was in Melbourne the night Trump won the election so he got tanked at Bar Liberty and went back the next afternoon for a chat with owners Banjo Harris Plane and Michael Bascetta. The pair met years ago while working at Attica and opened the significantly more casual Bar Liberty earlier this year. We chat about their beginnings, collaborating, what Sydney has that Melbourne doesn't (and vice versa), and heaps more.

Levins catches up with Mike Eggert, Berri Eggert and Jemma Whiteman, collectively known as Pinbone. After closing their Paddington restaurant last year, the Pinbone crew have been looking for new sites to open something new and this weekend sees the opening of Good Luck Pinbone, their new restaurant in Kensington. Find out what they've been up to this year, what the new joint's all about and what they have to say on some classic Mitchen controversial topics.

While in Hobart, Levins visits two of the most beloved figures in the Australian food scene - Sue Dyson and Roger McShane. Best known for importing French natural wines through their business Living Wines, Sue and Roger have been writing about food and wine for 30 years, for almost every publication, including Gourmet Traveller (they were the Tasmanian editors for years) and their own website, Food Tourist, one of the earliest Australian food websites, predating the blog boom. Find out how Sue and Roger got started writing about food, why they're drawn to natural wines and how they avoid stale tastes and opinions as they get older.

Levins sat down with Tom Lawrence from Proudly Pokies Free, a new youth focused campaign which raises awareness about the damage caused by the pokies in Australia. NSW has 50% of Australia's pokies, and you'd be surprised just how many venues (and restaurants) you visit regularly that still have rooms filled with them. Getting rid of pokies means more room for food and live entertainment. Find out more at http://proudlypokiesfree.com/.

Levins and Mitch fired up Facebook live video and answered the back log of old emails and listeners questions! Hear us talk about hot topics like home delivery, lattes, craft beer, drunk episodes, recording equipment, gimmicky food and more in what will become a monthly live experience.

We caught up with Tyson Koh from Keep Sydney Open just after the successful second rally in Sydney last weekend. What does Tyson have planned next for the campaign? Also joining us is Fratelli Paradiso and 10 William St’s Gio Paradiso, adding his thoughts on the lockout situation as a late night business operator, and letting us know about his new restaurant opening next year in Tokyo.

On a late Monday night at The Dolphin Hotel, Levins strikes up a conversation with Monty Koludrovic (Icebergs) and Morgan McGlone (Belle’s Hot Chicken, Harpoon Harry), plus visitors from Yardbird in Hong Kong, head chef Matt Abergel and beverage director Elliot Faber.

In what may be the rowdiest episode of The Mitchen yet, we discuss raw chicken, bulldog jizz, head to tail eating around the globe and yakitori techniques. We are also collectively responsible for dropping the c-bomb more times in one podcast than ever before probably. Send your awards/complaints to themitchenpodcast@gmail.com.

Levins records another booze episode alongside wine writer Mike Bennie, with special guest Mikey Nicolian from Continental. After answering a listener question about buying wine in Sydney, we talk about cans, cocktails and a whole bunch of stuff that I don't really remember, which shows how successful this booze episode was. Don't operate heavy machinery while listening to it.

Levins and Mitch reflect on the Sydney food awards season, going through the Good Food Guide and Gourmet Traveller award lists and agreeing, disagreeing and making completely unwanted suggestions about which chefs and restaurants they deserved to win in their eyes.

A day before they won the award for best bar food (and gained a hat!) in this year's Good Food Guide, we went to Continental in Newtown and recorded an episode with Elvis Abrahanowicz (Porteno, Bodega, Continental) and Jake Smyth (Mary's, The Unicorn). In this super fun episode we discuss the pressure of running multiple beloved and busy venues, compare Father's Day hangovers and talk about what it's like to live and work in Newtown these days.

The 2016 edition of Gourmet Traveller's Australian Restaurant Guide has just been released, so we sat down with Pat Nourse, Gourmet Traveller's chief restaurant critic and deputy editor, plus two of the people from the restaurant Pat named number one in the country: Momofuku Seiobo's general manager Kylie Javier Ashton and executive chef Paul Carmichael.

Together we discuss the importance of restaurant reviews and guides (and the difficulties faced by putting one together), the challenges Paul had to overcome when taking over the kitchen at Seiobo and which is the best state for dining in Australia (hint: it's not NT).

Levins and Mitch speak with Adelaide's Duncan Welgemoed, who was previously on the Live From Rootstock episode of The Mitchen, briefly chatting to us as he cooked an entire cow over coals. This time he doesn't roast any livestock BUT he does cook up a few incredible tales, including how he opened his acclaimed restaurant Africola (and why they're making the change from South to North African cuisine) AND some completely insane stories from his life as young South African chef trying to get by in the UK with no money. Great yarns, great dude, great ep.

We’re super excited to announce that Sydney’s Lord Mayor of Wine, Mike Bennie, will be hosting an episode of The Mitchen about wine once a month! We’re even more excited to announce that we FOUND MIKE EGGERT! The two Mikes and Levins gather around Mike Bennie’s business table with every intention of talking about wine but end up talking about beer for 40 minutes before a surprise interruption by Tom Egan of Jed Wines, who’s brought with him a selection of Argentinian wines for us to try. Are we really gonna do this every month? It’s gonna get messy.

The Mitchen is back with new episodes going up every Tuesday! This week Levins and Mitch head to Redfern's Moon Park to speak with two thirds of the owners, chef Ben Sears and sommelier-manager Ned Brooks. One of our favourite restaurants in Sydney, Moon Park's incredible modern Korean food will only be available for another month when they shut their doors in September. We talk with Ben and Ned about how they got started, what Korean food means to them and the ongoing problems that come with running your own restaurant.

After falling in love with his philosophies on tea, food and life in general, we invited ourselves over to Arthur Tong's warehouse, where he runs his tea business Teacraft. Arthur treats Levins, Mitch and Ghostboy Cantina's Toby Wilson to eight courses of tea - including whites, blacks and blends. It's the most relaxed episode of The Mitchen ever! Listen as the lads slurp away while discussing Teacrafts' origins, the essential purchases you need to make to become a tea wizard, Mitch's recent food travels in the UK and Europe and Toby's plans for Ghostboy Cantina at Tio's.

Levins and Mitch catch up with Toby Wilson, who opened up Ghostboy Cantina, a not authentic Mexican taqueria inside a Chinatown food court earlier this year. We talk Mexican food in Sydney, the best food court spots and fried chicken. Mitch lets us know why he’s headed to the UK for a bit and Levins talks about The Dip popup going down at Automata this weekend.

We're back with another BBQ episode! The last one was about Alabama BBQ, this time we go whole hog with Rodney Scott from Scott's BBQ in South Carolina and Morgan McGlone (Belle's Hot Chicken, Harpoon Harry). Rodney came to Sydney to smoke a whole pig or two with Morgy and found a moment to chat with us about all things slow and low.

We recorded a live episode in front of an audience at the MCA Artbar at the end of April, with special guests Pat Nourse (Gourmet Traveller), Lee Tran Lam (The Unbearable Lightness of Being Hungry, Good Food), Dan Hong (Mr Wong, Ms G's) and Giovanni Paradiso (10 William St, Fratelli Paradiso). Over the course of a pretty manic hour we have a carbonara battle, play a round of celebrity heads, ask each other a few hard hitting questions and get heckled by the audience for swearing too much.

Thanks so much to Kate Scardifield and everyone at the MCA for setting it all up!

Apr 20, 2016

Last week Mitch, Levins and Dan Hong sat down with Perth producer Ta-ku at Golden Age and spoke about getting into cooking, the food they eat when they're heartbroken and how they all know each other.

Plus: Levins reveals the details of our very special, first ever LIVE EPISODE of The Mitchen, happening next week at the MCA Artbar!

We back! Mitch and Levins head to the Noma Australia site as the staff pack the restaurant away into boxes before heading back to Copenhagen. We catch up with Noma team leader Katherine Bont and restaurant manager James Spreadbury, plus meet a handful of Noma chefs from Australia, America, Italy and Brazil!

We made it to 25 episodes so we had to go BIG to celebrate - so we saved up all our money and got the biggest star we know: DAN HONG. Merivale's golden child himself, from the kitchens of Mr Wong, Ms G's, Lotus and El Loco, sitting at the Mitchen table answering the millions of Hongy realted questions that needed to be answered. This episode also marks the return of Darren Robertson from Three Blue Ducks in Bronte and Byron, and we talk about burgers, hot sauce, T.O.Y.S., managing two restaurants at once and Mitch's new business venture, ending the episode with some thrilling glad wrap and apron talk.

Ahead of the Keep Sydney Open rally this weekend, we invited Keep Sydney Open's Tyson Koh to come onto the show to talk about how Sydney's lockout laws have affected Sydney's nightlife and small business. We're also joined by Ed Loveday, Mitch's business partner at ACME, who recently closed his bar The Passage, thanks in part to the lockout laws.

If you love going out in Sydney and don't want to see more rules brought in that will give us even less to do at night, please join us at the Keep Sydney Open rally this Sunday afternoon from 12:30pm at Belmore Park. For more info head to Facebook.com/KeepSydneyOpen2014.

Mike Baird locked us out of Mitch's kitchen this week so we recorded it in the sunny Harmony Park in Surry Hills and invited special guest Louis Tikaram (EP & LP, Los Angeles; ex-Longrain), Jemma Whiteman (Pinbone) and Jordan Toft (The Coogee Pavillion) to join us in the sunshine.

This week we talk about those dang lockout laws and what went down at 10 William St last weekend, point out our favourite places to eat in LA and find out what Pinbone cooked in Indonesia.
